Bars start thinking outside the clock to make money

The math for Lowest Greenville business operations never makes sense to any casual or thinking observer.

Try to understand this business math -

A typical Lowest Greenville business pays $30sf for rent, or between $3,000 and $5,000 per month. It opens the doors to the public on three nights per week - Thursday, Friday and Saturday.

The busiest hours are between 10pm (if they are lucky) until 2am, for 12 hours of peak business per week, maybe 50 hours per month. They have to sell $2,000 each evening or more worth of alcoholic beverages (you really don't think they sell food, do you?) to make the rent payment, not counting any profit.

Given the improbability of high-speed service breaking the sound barrier, how are these businesses making money? It's easy - Think outside the clock.

According to the DPD, one local bar has apparently been ignoring the clock while paying careful attention to when the DPD goes home, and making the most of it.

Ibero is located in the old Ali Baba Restaurant space at the end of the block near Taco Cabana. They have a clear view of the DPD command post (through their side window) on Alta Street, which usually clears out by 230pm. This made it easier to know when to bring the patrons back - after the police have left the area.

It was observed that Ibero (1905 Greenville) had patrons inside its establishment after 2:00 am. The DPD sergeant on Greenville Avenue for Friday evening made several attempts to get inside the bar, but the employees refused to open the door. Officers could see several people still inside the location drinking. Other officers observed employees letting people out the back door.

The bartender finally came outside and became confrontational with the DPD sergeant.

A citizen reported to the sergeant that Ibero's management waits for the officers to leave Greenville Avenue, then lets its patrons back inside after 2:00 am.
